We will open our factory to the public on Saturday, November 19 and Saturday, November 26, 2011
from 10 am until 4 pm on both days. This special day will include:

· Free Balloons for children
· Free tours of the candy factory. We will be making Candy Canes by hand!

Here’s a preview of what you will see:
We will start off the batch by boiling sugar, corn syrup, water and cream of tartar to 310°. We will then pour this hot syrup onto the oiled marble table. We will proceed to mix the batch up to cool it down. We will add the flavoring to the batch while it’s on the marble table. When it has cooled sufficiently, we will separate a small piece or pieces and add food coloring to that piece. This will be the stripe


The main piece, which is still an amber color, will be pulled on the candy hook when it has cooled enough to be handled. After pulling it on the hook, it is place in front of the candy heater and the stripes are applied. The batch is formed into a triangular shape which will be maintained throughout the entire pulling process.
The stripes tend to blend into each other and each candy cane will be slightly different because of this.
The candy cane batch is pulled out in a long rope shape, snipped off and passed to the person who will be forming the hooks. That person bends the canes into their cane shaped, making certain that the tips are pointed in the proper direction and that the cane is as straight as possible.
 
After the canes have cooled for about 30 minutes, they are place in a cellophane bag and sealed closed with a heat sealer. The flavors that we are currently offering are peppermint, wintergreen, spearmint, cinnamon, root beer, orange and raspberry.
