We make all of our hard candies using copper kettles and a
marble table because they distribute the heat evenly, avoiding those pesky hot
spots.
| Step 1: Boil ingredients ( Sugar, Corn Syrup, Water, Cream of Tartar)
and pour onto marble table. It's consistency is that of a thin (Hot!) syrup.
Add Flavoring. |

| Step 2: Mix the flavor using dough cutters. When it has cooled and become
more solid, use dough cutters to divide the batch into 2 or 3 pieces depending
on how many colors of stripes we want to put in this particular batch. This
photo shows 2 stripes. The larger main piece is now carried to the candy
hook to be pulled (similar to a taffy pull). This "aerates" the
candy - adds air to the batch, causing it to increase in volume and turn
white in color - also causes the batch to cool further. |

Step 3: After pulling the main piece on the hook, it is moved in front
of a candy heater, along with the 2 colored pieces. The colored pieces
are now cut into the desired number of stripes and pressed onto the main
piece. |

Step 4: Ribbon candy is now pulled out into a long, thin ribbon and
handed off to the "twister" who shapes the distinctive curls
that you see in Ribbon Candy.

Step 5: Repeat the above steps 7 times in 1 day so that we have 7 different
flavors. We then package the candy immediately to prevent it from becoming
sticky. Notice that we do not use preservatives. Because we don't use
preservatives, the weather plays an important role in the process of making
hard candies. It must be cold and dry for us to make these candies so
that the candies do not become sticky as we make them. Humidity in the
air will cause the candy to become so sticky that it will stick do itself,
making it impossible to package.

We make 3 types of Ribbon Candy: Spice Flavors (Anise, Clove, Peppermint, Cinnamon,
Molasses, Wintergreen and Orange - we know orange isn't a spice, but we had
to have a 7th flavor), Fruit & Liqueur Flavors: Raspberry, Lemon, Orange,
Irish Cream, Amaretto, Molasses, Kahlua and Lime. Special Edition Molasses Flavored
Peanut Butter Filled Ribbon Candy: We don't make a lot of this (it's very difficult
to make) so order it to be sure that you get some! We DO NOT ship Ribbon Candy.
It is very thin and guaranteed to break in transit, it cannot even survive a
2 inch fall, much less the beating it might take during shipping. Upon arrival,
it would just be pretty colored shards of candy. Did I sugar coat that?
